Commercial Dishwasher Not Cleaning? An Engineer's Diagnostic Guide
A commercial dishwasher that runs a full cycle but leaves crockery and glassware dirty is more than an annoyance — if it can't clean, it almost certainly can't sanitise, and that's a hygiene problem. The good news: poor wash results are almost always one of four causes, and the first two you can rule in or out before an engineer arrives.
Quick answer
If a commercial dishwasher runs but isn't cleaning, check these four things in order:
- Wash and rinse arms & jets — blocked spray jets or arms that aren't spinning. Nothing gets clean if the water isn't reaching the ware.
- Water temperature — a wash tank that's too cool won't lift grease, and a rinse that never reaches 82–85°C won't sanitise.
- Detergent & rinse-aid dosing — an empty container, a blocked dosing tube or a failed dosing pump means little or no chemical in the wash.
- Limescale & dirty wash water — in hard-water Kent, scale chokes jets and elements, and a soiled sump just recirculates dirt back over the ware.
What to do before calling an engineer
With the machine isolated and powered off, maximise the chance of a first-visit fix:
- Clean the filters, scrap tray and sump — then lift out the wash and rinse arms and clear every jet. A pin or cocktail stick clears a blocked nozzle; check the arms spin freely once refitted.
- Check detergent and rinse-aid — that the containers aren't empty, the pick-up tubes are in the chemical, and there's no crystallised residue blocking the line.
- Look at how it's loaded — overloading, stacked items and the wrong rack for the ware all leave shadows the water never reaches. Re-rack and run a test cycle.
- Note the temperatures and any error code — most machines show wash and rinse temperatures. If the rinse isn't reaching 82–85°C, flag it. Note when the problem started, too.
- Check the descale log — East Kent is hard-water territory, so skipped descaling is a common root cause of poor wash results.
⚠️Stop — don't keep serving off it
Take the machine out of use and call an engineer if you have:
- Crockery or glassware leaving the machine visibly soiled — if it isn't clean it isn't sanitised, and putting it back into service is a HACCP failure.
- A final rinse that won't reach 82–85°C — that rinse is the thermal sanitising stage. Below it, items are not safe to use even if they look clean.
- Detergent residue or a chemical taste on the ware — a dosing or rinse fault that's a food-safety risk, not just a quality one.
- A burning smell from the pump or element area — power down at the isolator and do not restart it.
- Repeated fault codes after a clean and reset — that's a fault, not a glitch; stop resetting it.

Why is my commercial dishwasher not cleaning properly?
Almost always one of four things: blocked wash or rinse arms and jets, water that isn't hot enough, detergent or rinse-aid not being dosed, or limescale and a dirty wash tank recirculating soil. The arms, dosing and loading are the everyday causes you can check safely; element, thermostat and dosing-pump faults are engineer jobs.
Can I fix poor wash results myself?
You can clear the filters, sump, wash arms and jets, check the detergent and rinse-aid are dosing, and re-rack the load — with the machine isolated and powered off. Beyond that — the wash and rinse thermostats, heating elements, dosing pumps and solenoid valves — is engineer territory, both for safety and to avoid a misdiagnosis that costs more downtime.
Why does limescale stop a dishwasher cleaning?
East Kent is hard-water country, so scale builds fast. It furs up the heating element so the water never gets hot enough to lift grease, and it blocks the fine rinse jets so the ware comes out streaked or still soiled. Planned descaling on the right schedule is the single biggest thing that keeps wash results consistent.
Is a dishwasher that won't clean a hygiene risk?
Yes. A warewasher relies on a final rinse around 82–85°C to thermally sanitise crockery and glassware. If items leave the machine still soiled, or the rinse never reaches temperature, they are not sanitised — a HACCP control point. Putting visibly dirty ware back into service is a clear food-safety failure.
How quickly can you attend a warewasher fault in Kent?
Same working day for emergencies wherever possible. Our engineers are based in SE Kent and manufacturer-trained on Hobart, Winterhalter, Maidaid and Classeq. As a Triple-ISO certified business — ISO 9001, ISO 14001 and ISO 45001 — we're the only Kent catering equipment service company holding all three, which matters for operators with their own audit and compliance obligations. Service-agreement holders get priority dispatch with a defined SLA.
How do I stop poor wash results coming back?
Most repeat problems come from build-up and habit. Clear the filters and wash arms daily, run the descale cycle on schedule, keep detergent and rinse-aid topped up, and don't overload the racks. A service agreement adds planned descaling and a scheduled service so it's caught before it spoils a service.
