Commercial Oven Not Reaching Temperature
Slow ovens cost you covers and put food safety compliance at risk. Here is how to work out what is wrong with a Rational, Falcon, Blue Seal or Lincat oven before you pick up the phone.
Quick answer
A commercial oven that will not reach temperature, or takes far longer than usual, usually points to one of a handful of causes. Work through these before assuming the worst:
- Door seal (gasket) worn, torn or not sealing evenly, letting heat escape
- Faulty or drifting thermostat, temperature probe or controller board
- Element failure on electric ovens, or a burner/ignition fault on gas models
- Gas supply pressure too low, or a partially blocked gas jet
- Fan motor weak or bearing worn, reducing heat distribution on convection ovens
- Insulation panel damage or a build-up of carbon and grease restricting airflow
Some of these are quick checks a kitchen team can do safely. Others, particularly anything involving gas or electrical components, need a qualified engineer.
What to do before calling an engineer
A few minutes of checking can save a wasted call-out charge, and gives our engineers a head start when they arrive.
- Check the door seal. Run your hand around the gasket while the oven is off and cold. Look for tears, flattening or gaps where the door does not sit flush.
- Test with an independent thermometer. The dial or digital readout on an ageing controller can drift by 20–30°C from actual cavity temperature.
- Time a full heat-up cycle. Note how long it takes to reach a set temperature from cold and compare it to the manufacturer's stated figure.
- Clear grease and carbon build-up. Heavy soiling on elements, burners or fan blades reduces heat transfer and airflow.
- Log any error codes. Rational, Electrolux and other combi models display fault codes that speed up diagnosis considerably.
- Check nearby appliances. If other gas equipment is also underperforming, the issue may be supply pressure rather than the oven itself.
⚠️When to call immediately
Stop using the oven and get an engineer out straight away if you notice any of the following.
- A smell of gas anywhere near the appliance, or a burner that will not ignite properly
- Scorch marks, sparking or a burning smell from the control panel or wiring
- The oven is failing to hold temperature during service and food safety records show cold spots
- Visible flame that is yellow, lazy or lifting off the burner rather than steady blue
- Trip switches or fuses repeatedly cutting out when the oven is switched on

Why does my oven take much longer to heat up than it used to?
This is most often a worn door seal letting heat escape, a failing element or burner, or grease build-up restricting airflow around the fan. A gradual slowdown over weeks usually points to wear rather than sudden failure.
Can I replace an oven door seal myself?
On many models the gasket clips or screws into a channel and is straightforward to source and fit. However, getting the seal seated correctly matters for even heat distribution, so if in doubt have an engineer check it during a service visit.
Is a gas oven not reaching temperature dangerous?
It can be. Poor combustion, a lazy yellow flame or low gas pressure can indicate an issue that a Gas Safe registered engineer needs to inspect. Never attempt to adjust gas components yourself. See the HSE guidance on gas safety for more.
How often should a commercial oven be serviced?
Most manufacturers and insurers recommend at least twice yearly servicing for heavy-use kitchens, with more frequent checks for high-volume combi ovens. A planned maintenance contract keeps this on schedule automatically.
Will a faulty oven affect my HACCP records?
Yes. If food is not reaching or holding safe cooking temperatures, that is a food safety compliance issue as well as an equipment fault. Log the discrepancy and get it checked promptly.
