Commercial Dishwasher Not Draining? An Engineer's Diagnostic Guide

A commercial dishwasher that won't drain stops a kitchen fast — no clean crockery mid-service, a sump full of dirty water, and a hygiene problem that grows by the minute. The good news: it's almost always one of four causes, and the first two you can rule in or out before an engineer arrives.

Quick answer

If a commercial dishwasher won't drain, check these four things in order:

  1. Filters, scrap tray & sump — the everyday cause. Debris, broken glass and label residue choke the flow into the drain pump.
  2. Drain hose & standpipe — kinked, crushed, lifted out of position, or scaled up inside.
  3. Drain pump — a jammed impeller (glass, cutlery, china) or a failed motor. Engineer territory.
  4. Float or level sensor — stuck on scale or detergent residue, so the machine won't run the drain stage.

What to do before calling an engineer

With the machine isolated and powered off, maximise the chance of a first-visit fix:

  • Clean the filters, scrap tray and sump — clear every bit of debris and check the sump outlet runs free (watch for glass). This alone fixes a large share of cases.
  • Check the drain hose and standpipe — not kinked, crushed or lifted, and nothing blocking the air gap it feeds into.
  • Note any error code on the display and when the fault started — after a clean cycle, a busy service, or out of the blue?
  • Check the maintenance log — when was the last descale? In hard-water Kent, skipped descaling is a common root cause.

⚠️Stop — don't keep running it

Power down at the isolator and call an engineer now if you have:

  • Standing dirty water that won't clear between services — a hygiene and HACCP risk the longer it sits, and the machine can't sanitise on the 82–85°C rinse.
  • A burning smell from the pump area — power down at the isolator and do not restart it.
  • Water leaking onto the floor — a slip and electrical risk if left running.
  • Repeated fault codes after a clean and reset — that's a fault, not a glitch; stop resetting it.
  • Service in a few hours and an unrecoverable machine — call now, don't wait and hope.

Commercial dishwasher not draining — common questions

Why won't my commercial dishwasher drain?

Almost always one of four things: blocked filters or sump, a blocked or kinked drain hose, a failed or jammed drain pump, or a stuck float/level sensor. Filters and the drain path are the everyday causes and the ones you can check safely; the pump and sensor are engineer jobs.

Can I clear a blocked dishwasher drain myself?

The filters, scrap tray, sump outlet and drain hose — yes, with the machine isolated and powered off. Beyond that — the drain pump, the level sensor, the solenoid valve or the fixed waste plumbing — is engineer territory, both for safety and to avoid a misdiagnosis that costs more downtime.

Is standing water in the dishwasher a hygiene risk?

Yes. A warewasher relies on a final rinse around 82–85°C to thermally sanitise crockery and glassware. If it can't drain the soiled water it can't fill cleanly for that rinse, so items may not be sanitised — a HACCP control point. Standing water also turns stagnant and breeds bacteria inside the machine.

How quickly can you attend a warewasher fault in Kent?

Same working day for emergencies wherever possible. Engineers based in SE Kent cover all of Kent, and we're manufacturer-trained on Hobart, Winterhalter, Maidaid and Classeq. Service-agreement holders get priority dispatch with a defined SLA.

How do I stop it happening again?

Most repeat drainage faults come from build-up. Clear the filters daily, run the descale cycle on schedule — East Kent is hard-water territory, so scale builds fast — and don't over-dose detergent. A service agreement adds planned descaling and a scheduled service so it's caught before it stops a service.
